As November settles in, we’re finishing up the last of our fieldwork for the season. There are still some cabbage and carrots to bring in, but most of the fields are now seeded down with cover crops to rest and replenish the soil for next year. We also planted our garlic, which always feels like the first hopeful step toward a new growing season.

Over in the hydroponic greenhouse, things are taking off! We’ve started harvesting our microgreens, and we’re excited to start picking tomatoes and lettuces in the next few weeks. It’s always a nice burst of green when the world outside starts to get gray and cold.

Even though the outdoor growing season is winding down, our farm store stays well-stocked through the winter. We’ve got plenty of our own squash, turnips, cabbage, and carrots — perfect for hearty soups, roasts, and cozy dinners. And before you know it, we’ll be harvesting our own fresh lettuces, basil, and tomatoes grown in the greenhouse!
